Start with the work at each station. A useful recruitment brief identifies the species, product, knife work and experience needed for each vacancy. Add the assessment you want candidates to complete and the supervision available when they join.
Separate the roles before you start sourcing
Recruiting several people for a processing floor does not mean they all need the same background. Write a short description for each role and identify what the person must already know.
- Boning
- Describe the species, cuts, station and knife work. State whether the role involves following a set process independently or learning under supervision.
- Slicing
- Specify the products, portioning or trimming tasks and quality checks. Include the equipment and production environment.
- Slaughtering
- Describe the actual station and duties, relevant experience and supervision. If the work has halal requirements, confirm the requirements for that particular role with your facility and certifying body.
Check experience against your production work
A job title or course certificate gives only part of the picture. Ask about the person's recent work and their own responsibilities. Useful questions include:
- Which species, cuts and processing stations have you worked on?
- What did you do independently, and what required supervision?
- How were quality issues identified and reported?
- What knife-care, hygiene and workplace-safety routines did you follow?
- Who can confirm the work and dates of employment?
Record the answers consistently. Keep training, practical experience and any verified credentials in separate fields so your hiring team can see what each piece of evidence establishes.
When is halal-production experience useful?
Experience in a halal-production environment can be relevant when a worker understands the procedures your facility needs them to follow. Explore the person's actual duties, instruction and supervision. Malaysian nationality alone does not establish halal competence or approval for a particular role.
For Australian export red meat, the Department of Agriculture, Fisheries and Forestry describes the Australian Government Authorised Halal Program. Your establishment's requirements and those of its Approved Islamic Organisation should guide the checks. A recruitment assessment does not replace that process.
In the brief, identify whether you need general experience in a halal facility or a person for a designated slaughtering role. Ask your certifying body what evidence, training or approval applies before making candidate requirements final.
Agree the practical assessment before interviews
Give the assessor a short written brief: the task, equipment, safety arrangements and what a satisfactory result looks like. Decide which checks can be completed remotely and which need an appropriate practical setting.
Use the assessment to examine the work you expect the person to do. Discuss technique, consistency, quality and safe practice together. A video can support a conversation, but agree how the person's identity, contribution and working conditions will be verified.
Agree who handles each next step
Name the contacts responsible for sourcing, screening, references, technical assessment, offers and workplace induction. Set out recruitment fees and the scope of work in writing.

Share your preferred timing alongside the roster, pay range, location and any accommodation or transport arrangements. Candidate availability, assessment and employment permissions will affect the schedule.
